Ham Boilers
Design and Construction Advantages:
With the microprocessor control unit which exactly controls the critical parameters of the cooking process allows for setting the following work options:
- Cooking with assigned temperature of the bar and cooking time
- Cooking with defined temperature of the water and steaming time
- Cooking with defined difference of bar and water temperatures
- Up to 50 technological programmes achieves high quality and repeatability of cooking processes.
- Recording of goods batch number, its parameters and person responsible for loading data into the memory of controller enables data transfer to the master computer.
- The archival records of cooking process are necessary with introduction of the HACCP system.
- The electronic control enables programming of the boiler with an advance of up to 24 hours ahead - Auto start function.
Boiler Construction
Double jacket construction with an intermediate heating medium quickly achieves the required temperature and at the same time prevents over cooking in the boiler. Uniform temperatures are maintained throughout.
The insulated and pneumatically operated cover reduces the risk to the operator. Standard equipment with shelves for smoke sticks can be replaced by the mixer for fat melting or hopper / basket.
Heating Mediums
Client can choose from 4 types of power supply - electric, steam, gas and oil. Optimum utilization of energy is guaranteed by the boiler's effective insulation which maintains the temperature inside.
Hygiene
The whole construction of the boiler is made of acid resistant stainless steel. Furthermore special profiling of boiler's inside shape ensures simple emptying of the boiler and ease of maintainance.
