Tempering Continuous and Batch Ovens
Microwave tempering provides the speed to quickly raise the temperatures of food products to an acceptable frozen temperature to allow further processing. Microwave significantly reduces drip loss compared to tempering rooms.
Food products such as meat, fish, fruit, vegetables respond to microwave tempering typically 25 kg of product can be tempered from -18C to -4C in 60-70 seconds!
The microwave oven design will accommodate most food products packaged in non metallic containers, up to a maximum height of 200 mm and 600 mm wide.
